Dragon fruit does not gain substantial eating quality after harvest. Define maturity for each cultivar and destination, prevent injury and contamination, remove field heat under a validated protocol, and preserve lot identity.
No single color value, soluble-solids number, or days-after-flowering count fits every cultivar and route. Build and validate a maturity specification using cultivar identity, tagged anthesis, skin-color progression, bract condition, firmness, size or dry matter where useful, defects, sensory quality, transit duration and buyer feedback.
Sample across block positions and harvest flushes. Calibrate instruments and methods, photograph reference stages, and revise acceptance windows when season or destination changes.

Published temperature and relative-humidity ranges are useful starting evidence, not universal setpoints. Cultivar, maturity, production region, prior heat, package, storage duration and destination matter; dragon fruit may show chilling injury under unsuitable low-temperature exposure.
Use UC Davis and peer-reviewed evidence to design trials, then agree the actual setpoint and tolerance with the buyer. Log air and representative product temperatures, exposure duration, relative humidity where controlled, door events and alarms.
Warm humid air meeting cold fruit can wet surfaces and packages. Plan staging, wrapping or ventilation, loading and receiving transitions so condensation does not promote decay, weaken cartons or obscure labels.
First-expired, first-out uses remaining validated life, not simply first-in, first-out. Link release date, maturity, temperature history, quality checks, destination and hold status to inventory.
