Dragon fruit does not gain substantial eating quality after harvest. Define maturity for each cultivar and destination, prevent injury and contamination, remove field heat under a validated protocol, and preserve lot identity.

01 / Maturity and field handling
A multi-index decision

Pick for
the destination.

No single color value, soluble-solids number, or days-after-flowering count fits every cultivar and route. Build and validate a maturity specification using cultivar identity, tagged anthesis, skin-color progression, bract condition, firmness, size or dry matter where useful, defects, sensory quality, transit duration and buyer feedback.

Sample across block positions and harvest flushes. Calibrate instruments and methods, photograph reference stages, and revise acceptance windows when season or destination changes.

Map time and temperature from cut to cooling. A cool room cannot rapidly or uniformly remove field heat when overloaded, poorly ventilated, or used with an unsuitable package and airflow pattern.

01 / Receive

Check and time-stamp

Verify lot, block, cultivar, harvest time, container condition, contamination, pulp or product temperature sampling method, quantity and release status. Segregate uncertain lots.

02 / Sort

Remove defects early

Separate decay, contamination, punctures, splits, severe abrasion, sunburn, shrivel, immaturity and overmaturity under a written defect standard. Record disposition; do not conceal defects.

03 / Clean

Use a validated process

Dry brush, wash or sanitize only under a process appropriate to the facility and current food-safety rules. Manage water quality and prevent cross-contamination; dry surfaces before packing where required.

04 / Grade

Match buyer specification

Grade by agreed cultivar, count or size, maturity, appearance, bracts, tolerance and package. Reconcile field quantity into grades, culls, samples and loss.

05 / Cool

Remove field heat

Select room, forced-air or another validated method for fruit, package and throughput. Measure product temperature at representative warm and cold positions, not air temperature alone.

06 / Pack

Protect fruit and airflow

Use clean food-suitable packaging, cushioning and vent alignment. Avoid abrasion, compression, excessive free space, blocked cooling paths and moisture-trapping materials.

07 / Hold

Control temperature and humidity

Use a cultivar-, maturity- and destination-specific setpoint validated against chilling injury, water loss, decay, journey and buyer protocol. Monitor calibrated sensors and product checks.

08 / Dispatch

Load a ready vehicle

Inspect cleanliness, odors, pests, damage and temperature condition; precondition as the protocol requires. Load for airflow and restraint, place loggers deliberately, seal and record handoff.

Use a protocol.
Watch the fruit.

Published temperature and relative-humidity ranges are useful starting evidence, not universal setpoints. Cultivar, maturity, production region, prior heat, package, storage duration and destination matter; dragon fruit may show chilling injury under unsuitable low-temperature exposure.

Validate the operating envelope

Use UC Davis and peer-reviewed evidence to design trials, then agree the actual setpoint and tolerance with the buyer. Log air and representative product temperatures, exposure duration, relative humidity where controlled, door events and alarms.

Condensation

Manage transitions

Warm humid air meeting cold fruit can wet surfaces and packages. Plan staging, wrapping or ventilation, loading and receiving transitions so condensation does not promote decay, weaken cartons or obscure labels.

Rotation

Use FEFO, not arrival alone

First-expired, first-out uses remaining validated life, not simply first-in, first-out. Link release date, maturity, temperature history, quality checks, destination and hold status to inventory.
